How to make a good Frittata?
The truth is… There’s not really a right list of ingredients. Instead, the more leftovers you have on your hands, the more your frittata will be delicious. Vegetables, ham, pasta or parmigiano reggiano are definitely perfect ingredients for a complete and balanced meal. About the method, as Italians we always think the simplest procedure of making a frittata is also the best one.
For 4 servings:
- 8 eggs
- 1 splash of Milk
- 1/2 cup leftover pasta fully cooked
- 1/2 cup mixed cooked vegetables (asparagus, to stay in season, is a very good combination)
- 1/4 cup shredded Parmigiano Reggiano
- 1 tablespoon extra-virgin olive oil
- Salt and pepper to taste
Preheat the oven to 350°F. In a bowl, beat the eggs with 1 splash of milk and season with salt, pepper and ½ cup of shaddered Parmigiano Reggiano. Whisk together the egg mixture, pasta, ham, vegetables, salt and pepper.
Line a ovenproof skillet or a round baking tray with parchment paper and spread 1 tablespoon of extra-virgin olive oil above. Pour the mixture to the skillet/baking tray and stir to distribute the ingredients.
Bake about 20 min. in the oven or until a knife inserted in center comes out clean. Grill the last 5 minutes or until the top is puffed and golden brown.
Done. Cool for at least 10 minutes, then serve with a green salad.
