  • Matured Pecorino cheese is made of pure sheep’s milk cheese with a pleasant, full and tasty flavour. It has a rustic white-brown crust that ensure inside an excellent cheese with a white and compact paste, which, with ageing, tends to flake and embellish its bouquet of flavours.

    It has a sweet, intense flavour, with hints of hazelnut and dried fruits. Enjoy it with pears and walnuts, or, when well matured, it is excellent even grated to give a more decisive flavour to your dish. It accompanies well with both white and red wines.
